Spinach and Artichoke One Pot Pasta

Yum... a quick and flavorful spinach artichoke one pot pasta. I was amazed at how the essential oils infused such an incredible flavor to this dish. If you don't have essential oils, use dry or fresh oregano and thyme instead. I got these essential oils for free with my Young Living Essential Rewards order and it's been fun to find creative ways to use them! I love that this only took about 20 minutes to make and I had enough leftovers to last for three days! Not to mention that this dish has everything you need in it -- protein, veggies, carbs, and flavor!
Ingredients
  • 1 lb. mild Italian sausage (use mushrooms for a vegetarian option)
  • 1 can (14 oz.) artichoke heart quarters
  • 2 tsp. mined garlic
  • 1 medium yellow onion
  • 8 cups (2 boxes) chicken (or vegetable) broth
  • 2 Tbsp olive oil
  • 12 oz. spaghetti (I use Dreamfields Pasta as it is lower carb)
  • 2 drops Young Living Taste of Italy or Oregano Essential Oil
  • 2 drops Young Living Thyme Essential Oil
  • Freshly cracked pepper and salt to taste
  • 4 oz. frozen cut spinach, thawed
Instructions
  1. Squeeze sausage out of casing and cook in pan until brown and crumbly. Set aside.
  2. Drain the can of artichoke heart quarters. Slice the onion thinly. Mince the garlic (I buy mine pre-minced in a jar).
  3. Place the broth, olive oil, mushroom, artichoke heart quarters, onion slices, and garlic in a large pot. Break the spaghetti in half and add it to the pot along with the drops of Taste of Italy or Oregano and Thyme essential oils (if you don't have these essential oils, just use a teaspoon of dried or fresh oregano and thyme). Add salt and pepper to taste.
  4. Push everything underneath the broth. If the liquid isn't covering the spaghetti, add some water until it does. Bring it to a boil, stirring occasionally to make sure the pasta isn't sticking. Allow everything to simmer with the lid on for about 10-15 minutes or until the pasta is tender.
  5. Drain most of the liquid out. Break up the spinach and add it to the pot (it doesn't have to be hot, as the pasta will warm it up). Add the sausage (I didn't even drain mine so to add the delicious flavor of the fat to it as well) and mix everything well. Serve hot!
